Tres Leches

cupcakes:
6 eggs (separated)
1/4 tsp baking soda
1/4 tsp salt
1 C sugar
1/2 C unsalted butter (melted and cooled)
1 C sifted flour
Preheat oven to 325. Beat egg whites baking soda & salt until soft peaks form. Beat egg yolks one by one  then add the sugar, beat until combined. Fold in the butter with a spatula then add flour in 1/4 c increments until mixed. Pour into FOIL (important )wrappers. Bake about 25 minutes or until golden brown.
Milk mixture:
1 14oz can sweetened condensed milk
1 12oz can evaporated milk
3/4 C heavy cream
wisk the 3 together. Poke holes in the cupcakes when they come out of the oven and brush milk mixture over the cupcakes until it is all gone. Allow cupcakes to absorb mixture completely.
Whipped Cream:
2 C heavy cream
1/4 C confectionery sugar
ground Cinnamon
mix heavy cream until soft peaks form then add the sugar and mix until combined.
Frost cupcakes with whipped cream and dust tops with cinnamon
